Swiss Espresso Extractor: How It Works

The Swiss Espresso Extractor® is the largest espresso machine on the market. Technically it is a scaled-up portafilter machine: the extraction process matches that of a traditional espresso machine and is controlled through time, temperature, pressure and coffee volume. The machine is built in Switzerland and the design is patented.

How a batch runs

At the start of each batch, 2.0 kg of coffee beans are drawn in and freshly ground in the integrated grinder – a specially adapted version of the Swiss mills built by Centino, matched to the batch size and to the extraction. That yields 5 litres of espresso at 6 Brix, the usual espresso concentration. After homogenisation the Brix value can be adjusted in the tank, anywhere from 3 to 12 Brix.

Hot and cold in one machine

Brewing temperature ranges from 20 to 92 degrees. The machine switches between hot and cold extraction within seconds, with no conversion work. Classic espresso and cold brew therefore come from the same unit.

Operation

An operator starts the process; the system then runs autonomously under supervision. The cycle is fully automated and digitally monitored.

Applications

Larger volumes

Where one unit is not enough, several can be run in parallel. Output rises accordingly with each additional unit.

How fast the machine works at its limit is shown by the Guinness World Record. All connection and performance figures are on the Technical Data page, and the brochure with the process diagram and dimension drawing is on the Flyers page. For technical questions, please use the contact form.
